There is one dish served always in Korean¡-s
dining table ; that is Gimchi.It is Korea¡-s
preserved food with long history using basic ingredients
such as Chinese cabbages, radish, inions, pepper
powders, garlic marinated in pickled shrimps and
anchovies. If cabbage is eaten as law, it becomes
salad and when it¡-s cooked, it is soup. And
if that is marinated, it becomes Gimchi. The taste
of Gimchi is neither natural as in salad, nor
civilized as in soup; however,

| it has a new taste with
the combination of nature and civilization. It¡¯s
taste and excellency are already well known worldwide.
Those who try Gimchi for the first time taste
spicy but after trying several times, people taste
sour in the process of fermentation instead of
tasting hot and salty. And also refreshing taste
from radish and sugar can be experienced.
Gimchi contains all kinds of nutrients such as
vitamins, proteins, amino acids, and other fibers
and it is good for constipation with lots of lactic
ferments. Moreover, it is effective for preventing
cancers and recognized by academic society for
improving appetites and preventing aging. Besides
cabbage Gimchi enjoyed by people most, there are
various kinds such as radish Gimchi using Chinese
radish, Ggakdugi with chopped radish, Oisobagi
with cucumber as the basic ingredient, and Mulgimchi
using various kinds of vegetables soaked in water.
Also, if Gimchi is tasted more deliciously, it
should be wrapped in Fofu ( Bean curd ) or tried
with boiled fork or order BossamGimchi with pickled
shrimps in restaurants.
Gimchi is not a simple side-dish. It has the taste
of hand passing down from long ago to the children
and people can experience Korean¡-s wisdom to
wait and to be relaxed.
If you visit Korea and try Gimchi, try it slowly
to taste its fantastic flavor. Additionally, feel
the cosmic mystery kept to the heart of Korean
people where nature and human become one body
